Louisiana Grilled Catfish


4 5-8 oz. catfish fillets, lightly seasoned with salt and pepper
1 c. finely chopped onion
1 c. chopped parsley
2 tbsp. olive oil or peanut oil
1 tbsp. finely chopped garlic
4 c. peeled and chopped fresh tomatoes
Ground red pepper, to taste
Salt, to taste
2 c. burgundy wine
1 tbsp. soy sauce

Place onions and parsley in oil and saute for 3-minutes. Add garlic, then the rest of the ingredients (except catfish fillets). Cook until onions are translucent, about 10 minutes. Grill catfish fillets, skin side up, for 3 minutes on a hot grill. Turn and cook 2 minutes more. Place in aluminum foil and place on grill-safe pan on grill and top with sauce. Close grill top and cook an additional 10 minutes. Makes 4 servings.
