Crab and Wild Rice

CRAB AND WILD RICE

Ingredients:
1 lb. flaked or lump crabmeat
7 oz. long grain wild rice
2 c. sliced fresh mushrooms
2 tbsp. extra dry vermouth
1/3 c. olive oil
1/2 tsp. salt
1/2 tsp. white pepper

Directions:
Remove any remaining shell or cartilage from crabmeat and set aside. In a large skillet or lidded pot, cook rice according to package instructions. Add mushrooms 5 minutes before rice is done. Add crabmeat and remaining ingredients. Cook an additional 2 minutes, stirring gently. Serve immediately. Makes 6 servings.
