Broiled Smelt

BROILED SMELT

Ingredients:
1 lb. smelt, cleaned and boned
1/4 c. olive oil
Salt to taste

Directions:
Brush smelt with oil and sprinkle with salt. Place on tray in oven and broil each side until brown and crispy. May be cooked on a grill instead. Arrange on a platter with new potatoes. Makes 4 servings.
