Baked Rockfish

BAKED ROCKFISH

Ingredients:
1/2 c. pesto
3 tbsp. lemon juice
1 medium carrot, finely chopped (about 1/2 c.)
1 medium leek, chopped
2 lb. rockfish

Directions:
Grease 13 x 9-inch baking dish and preheat oven to 375 degrees. Mix pesto, lemon juice, carrot and leek. Place fish in dish and spread vegetable mixture over it. Cover and bake for 40 minutes or until fish flakes easily with fork. Makes 4 servings.
