Baked Cod Fillet

BAKED COD FILLET

Ingredients:
2 lb. cod fillet
1 tsp. butter
Salt and pepper to taste
1 tsp. lemon Juice
1/3 c. milk

White Sauce:
2 tsp. butter
1/4 c. flour
Salt and pepper to taste
3/4 c. milk

Directions:
Wash and skin fish and cut in serving pieces. Place in buttered oven dish; season well and sprinkle with lemon juice. Pour milk around fish; cover and bake at 400 degrees for 20 minutes. Melt butter, stir in flour; cook for a minute. Do not brown; drain liquid from fish. Add enough milk to make 1 1/4 cups; stir liquid into butter and flour mixture. Bring to a boil, cook 1 minute, stirring. Add seasoning and a dash of nutmeg. Pour over fish; garnish with parsley. Makes 4 servings.
