Pan Seared Chilean Sea Bass

PAN SEARED CHILEAN SEA BASS

Ingredients:
2 8-oz. Chilean sea bass fillets
1/2 tsp. minced fresh garlic
1 tbsp. white rum
Juice of 1/2 lemon and 1/2 lime
Zest from 1/4 lemon and 1/4 lime
Pinch of orange zest
Salt and pepper to taste
1 1/2 tbsp. olive oil

Directions:
Combine all of the above ingredients. Rub the fish with the mixture and marinate in the refrigerator for up to 4 hours. In a preheated, lightly oiled pan, sear the fish on each side for about 2 minutes. Finish by baking in a preheated 350 degree oven for about 10 minutes. Makes 2 servings.
