Where are you from originally? Born in El Paso, then off to Midland, finally settling in Austin.
What brought you to Quality Seafood? The Owner Carol Huntsberger. She and I’s business relationship has grown over the years. I have been doing business with Quality Since 1991, it has been one of these places I always come back to. I have a great love and passion for seafood. I even have tattoos of fish and other sealife.
Where did you work prior to working here? Central Market, McCormick and Schmicks.
What type of background or work experience did you have? I am a graduate of CIA Culinary Institute of America, Class of 2000.
What do you love most about the restaurant and hospitality industry? This was never supposed to be my career, but it took over as a passion. While I was working towards becoming a waiter, 2 cooks walked out and I was thrown into the fire. I didn’t find food, it found me.
What is your biggest challenge on the job? My assertiveness. I never really fit the “corporate mold” , and I was willing to work outside the box. Sometimes it got me accolades and sometimes it got me in trouble.
What’s your favorite seafood item to cook? Crab. King Crab is my favorite. I have made a King Crab Corndog, it was amazing!
If you’re a monger, what’s your favorite fish to fillet? I love breaking down a whole Tuna. They are challenging because they are so big.
If you could give our customers one piece of advice when buying or cooking seafood, what would it be? It all really depends on the seafood, but a basic rule of thumb; Fish needs to swim in 3 things… water, wine, and butter.
What do you like to do in your spare time? Hang out with my family. I have 2 sons and a great love of music.
Do you have any hidden talents or hobbies? Music… I was a DJ for 13 years.
If you were to turn on your ipod what song would be playing? Willie Nelson.
What is your favorite holiday to celebrate and why?
Halloween, because you get to dress up and be someone else.
