Fred Bertheaud




Where are you from originally? Iam originally from Sonoma County California.  I moved to Austin, to be closer to my family, especially my granddaughter Faith who is 10 years old.

When did you begin working at Quality Seafood?  I started working for Quality Seafood September 18th 2013.

Where did you work prior to working here? I worked for the CIA – Greystone Project. ( California Institute of America), not the government.

  What type of background or work experience did you have?  I grew up in this industry.  My dad owned a bar when I was growing up and when I was ten, I used to ride my bike there during the summer and help him clean up.  Then my family purchased an Italian Restaurant from my Aunt, and I learned how to make traditional Italian recipes, and handmade pasta and ravioli.  I also went to the Marine Cooks Training Facility for 9 months.  Prior to that, I also worked on Cruise Ships, Oil Tanker, and for Stanley Steamer.

What do you love most about your job? The people I work with, and our customers.  It is a family atmosphere.

What is your ultimate goal?  I want to stay here at Quality.  I see myself here for a long, long, time.

In your opinion, what makes Quality Seafood unique?  The amazing, fresh, food that comes out of our kitchen every day.

What’s your favorite menu item to order on your break at Quality Seafood? Oh, the breaded fried shrimp are my favorite!

What’s your favorite fish to fillet?  Cod or Catfish

 What is your favorite fish to cook?  Why? I don’t know if I am allowed to say because we don’t carry it, but I love love love to cook barracuda, it is awesome fried.

If you could give our customers one piece of advice when buying or cooking seafood, what would it be?  

That is easy, don’t overcook it!

Do you have any hidden talents of hobbies?  I will say that I am pretty good at shooting pool, but my favorite thing to do is take my granddaughter Faith on excursions.  We have the most fun.

What is your favorite holiday to celebrate and why? My favorite holiday is Easter because 64 years ago I was born on April 9th and it landed on Easter Sunday.  Unfortunately, it has not landed on my birthday since.
