Stephen Balliew

Stephen is one of our cooks in the Restaurant.  Everyone calls him Blue, shortened from Balliew.  Stephen is an incredibly hard working individual and he has been a great asset to our Team.  Stephen makes some of the best soups for our soup of the day, if you ever see Tortilla Shrimp, you must try! 


Where are you from originally?  Dallas, Texas

When did you begin working at Quality Seafood? I have been at Quality for about a year and a half.

Where did you work prior to working here? I worked for the Old San Francisco Steakhouse for 35 years as a kitchen manager.

What type of background or work experience did you have?  I started working in restaurants at a young age, and worked my way up.

What do you love most about your job? Putting out great food that I like to eat.

What is your ultimate goal?  Continue to work in the seafood, restaurant industry?  Something else?

I would like to stay in the Seafood Industry.  I came over here because of the health benefits of eating seafood.  After working with beef for so many years, I am happy to be able to create great seafood dishes.

What is your biggest challenge on the job?  When we get so busy, staying focused and not getting in the weeds.

In your opinion, what makes Quality Seafood unique?  The awesome variety of fish we cook on a daily basis and the different styles of cooking we use.

What’s your favorite menu item to order on your break at Quality Seafood? My favorite menu item to order is the Blackened Catfish Po Boy and the popcorn shrimp.  I don’t usually like catfish, but this is the most moist and delicious sandwich.

What’s your favorite fish to fillet? I like to fillet swordfish and tuna. They are probably the easiest to me.

 What’s your favorite fish to cook?  Why? My favorite fish to cook is Italian Snapper Provencal.  It’s amazing!

If you could give our customers one piece of advice when buying or cooking seafood, what would it be?

Use your nose.  Seafood should not smell overly fishy, and Salmon is the healthiest fish to eat. It is so good for you.

Do you have any hidden talents of hobbies?  I play guitar and make my own music.

If you were to turn on your ipod what song would be playing?  Right now I am really focusing on my own music, so as soon as I get home, I start playing.

What is your favorite holiday to celebrate and why? My favorite holiday is Christmas because I get to spend time with my family.
